I don't see where they say any full CS version updates would overwrite older installed versions, any more than they do today. I currently have CS3. 4, 5 and 5.5 installed for client compatibility, and I don't see why going forward on a monthly subscription model would have to change that. It took me nearly a year to fully move into CS5 after upgrading while I waited for key plugins to become compatible. Both versions lived happily alongside each other. So unless Adobe decides kills the ability to use previous installed versions, I'm not worried. Yet.
