My best and most stable workstation  ever (comparing all mac and pc alike i have worked long term on)has been and is my Mac pro. 
I hope they release a new pro model line with the batch of new Xeon chips being released in Q1 2012
Niche, yes. A market, sure.

I am pretty sure if apple takes the pro out of the platform so will the software companies. And eventually the consumers will leave as well.

That said, Apple is an easy out of box experience. I'm no longer willing to pay that premium though. Build 2x 12 core Windows machines for the price of 1x Mac Pro!
