If you'll be working with the footage in post anyway then shooting parallel and setting the convergence as a last step in post is preferable even if you're not adding any CG elements. The one consideration to make when shooting parallel is that setting convergence in post will result in loss of resolution. For that reason it's ideal to shoot at a higher resolution than your deliverable.
