Alex...to your point...
See my video blog post for a clear explanation as to why Thunderbolt is fast enough for storage, video I/O and other stuff but nowhere near fast enough for things like RAM and GPU (at full speed).

To Tim's point (below), I'd say you're on the money. The slow uptake is part of it (I believe they are now working to open the market faster), but also there are architectural issues with Thunderbolt that would limit certain high-bandwidth functions. (see above).
