Do you have any other cards installed in your system Karl?
I am thinking about doing the same in my MacPro 4,1 system but using a 570 or 580 headless (just for CUDA processing) and use my "old" ATI HD 4870 for my dual screens. Does anyone know if I will have to deal with "the no boot screens" described by Karl with such configuration?

True, but my GTX 570 in my MacPro 3.1 runs fine and was pretty cheap. The only downside is no boot screens. If I need to do something that has to be done before the computer boots I run the MacPro in Target disk mode through my MacBook Pro. In six months I only had to do that once. Just make sure, if that's a route you choose, to install the NVidia drivers first. On Lion that's all you need. (other than the @#$% power cables for the card to connect to the mother board)
