I last week took delivery of a refurb MacPro 5.1 8-core as an upgrade from my late 2007 model 2.1. The only real limit to the 2.1 is its official inability to host a cuda card (although I've been told certain cards will work with a hack). Once I transition to the more recent machine I'll likely sell the old one.
It may be two year old tech, but it's still an upgrade for me, plus I can move on to whatever the new standard is in a year or two. Yes, I'm disappointed in Apple but it's not like the world is ending. I'm pretty sure this won't put me
out of business.
