I think this depends as much on your personality, clients and work environment as it does on the actual technology.
Certainly when I was younger I would've given it a shot, and I've been through periods where every cent saved is important - even making my own ethernet cables for example. But it's not the sort of thing I enjoy doing and that's why it's not something I'll do. Not because it can't be done, not because I don't know how, and not because of some economic argument or moral stance against Apple, but simply because I can't be bothered mucking around building my own machine.
I've skimmed through a few articles about Hackinstoshs and (generally) they seem to be put together by enthusiasts who enjoy that sort of thing.

Hi everyone,
Given the current state of the MacPro line and the fact that I don't think
I can stick around until 2013 for the new "maybe" MacPro, I'm wondering
whether a hackintosh is an option? I have reached the point where I'm
having to look at alternatives but given the many thousands I have tied up
in software, I'm very reluctant to move away from the MacOS. I've been
scouring the web and there seem to be a lot of mixed feelings about the
hackintosh and whether or not it's worth it but I really want to hear from
people who may have been using such a setup to run After Effects in a
high-end production environment.
