If they want to work with "officially approved" solutions, it's a pair of Quadro 4000s in a Mac. Otherwise, there are previously-discussed hacks to get supposed Windows-only cards to run inside a MacPro.

Aside from ray tracing, add an SSD for caching (to more quickly retrieve previous RAM Preview tests/caches), and at least 48 GB of RAM to take better advantage of multiprocessing (which, ironically, does not help raytracing).
