I wanted to express a hearty and tardy thanks to everybody who supplied some tips.  I got my issue solved.  I got my Jumbo Frames and 1000 Base T speed back after replacing an RJ-45 connector.  Not sure why the old connector worked on my laptop where it wouldn't work on the tower, but it appears that's what did the trick.
