Yeah, just use an expression with the fill effect, set the colour to a value based on the distance from the camera.  I do this a lot to generate z-depth maps from standard 3D comps, it's also pretty fast.

You can do a very similar thing to create fog, but use the tint effect because it has a blend-with-original option.  You set the fog colour for both black and white colours, then adjust the 'blend with original' value based on the distance from camera.

I'm actually working on a tutorial called "think like a compositor" which shows how you can approach motion graphics projects in the same way a 3D artist would approach a project in a 3D program, to give you more flexibility in the final 'look' in After Effects.  I demonstrate how to create simple z-depth maps inside After Effects.  I'll let you know when it's done, but will be a few weeks away yet.

I wonder if there's any way to create a depth map and blur as a post
process for those without acceptable video cards?  (Or cobble one together
with some environment fog or something.)  Not nearly as expensive as true
3D DoF, and usually fine.  I think I've only rendered a few shots from Maya
in the last 4 years where I've actually needed to use true 3D DoF.
Frischluft Depth Of Field in AE and a depth pass is often nice.

(zBlur in Nuke is even better -- looks great, easy to dial in, and fast.  I
think it's one of the few post-process DoF plugins I've seen that doesn't
have major problems with objects overlapping at different depths.  But I
digress...)

Seems like a moot point if you've got a good video card, but just a thought
for those without.  I still haven't gotten into 3D in After Effects so I'm
not sure if what I'm suggesting is possible or feasible.  A thought,
though...
