After selecting 'collect files' you should just be able to select "None (project only)" in the drop down menu of the dialog box that comes up. That option only sends a copy of the .aep to the watch folder. As long as the file paths in the .aep are recognizable by the farm computers, no problem.
With a project with lots of source files, it still takes a long time just to get to that dialog box - guess it's checking to make sure everything's still there.
