Like you said, the 30 pin connector is delicate and probably not great for ipad HDMI out while drawing - I use it for streaming video but it's wonky and likes to disconnect frequently, even when resting on a stand. I don't have an apple tv to test this with but I've used wireless airdisplay before and I don't think the latency is tolerable for live drawing. Of course, a large cintiq could be the answer if you've got a couple extra grand lying around. At worst you buy an appletv and return it if it doesn't work though.
