I'm still using a 2008 8 core tower. its filled with drives, 16gb ram, SSD, dual CUDA GPU's and I'm reasonably happy. its getting what I need done most of the time fast enough. Oh there are occasional times I'd want more but... then I have a 2010 iMac i7 2.93ghz. its 4 real cores, 8 virtual and its about 5% faster on average than the 2 year older 8 core zeon. I attribute this to mostly faster bus and hyper threading that works pretty well for AE renders. Even though it lacks a nV GPU, it stills edits pretty well with PP. my assistant editor uses it for syncing, rough cutting and other jobs without complaint. in some respects its a bit faster in handling than the big machine.
so its more about is it fast enough for your needs than fastest machine in the 'hood, and do you have enough storage. a refurb i7 quadcore 17" maxed on ram would be a very nice machine that would handle a lot of people's needs. I'm not talking about hardcore 3D and AE main machine, but for everything else I think it would pretty much fly if its anything like the iMac I have.
FWIW I'm eyeing replacing my current iMac with a new one mostly for the nV GPU with 2G of Vram. problem is 3-4 weeks shipping delay
