| Yes, the GPU is used for all rendering operations, whether those rendering operations are for final output or for previewing within the application. This is not true of the "headless" version of the application that serves frames over Dynamic Link; it uses just the CPU. This means, for example, that rendering an After Effects composition in Adobe Media Encoder will only use the CPU. Also, no decoding or encoding is done on the GPU.
