Those presets toward the top tell After Effects what number of GB to offer in the menu. Change whichever ones you want.
I suspect that Stephen has an entry like this:
"MP - Allocation Per Background Process Preset V" = "6.000000"

It's not a hack or secret. You just modify a settings in the preferences file. The menu in the After Effects Preferences dialog box has a few preset values, but you can change what those menu items are.
If I recall correctly, the entries in the preference file begins with "MP - Allocation for background process".

how did you get AE to support 6 Gb RAM per core?
is it a hack/secret edit?
Mine only allows me to use 3Gb max per core.
I've got the 32core with 64Gb of RAM.
even if I turn down the amount of cores, the max. RAM doesn't go up....
