At present you can save one rev back at time from AE. So right now it's easy to save a CS6 version from CCv12 (the upcoming version of AE). Older revs of course will not be able to apply any filters or new technology that may be introduced in subsequent versions of the app.
After a few years this could become unwieldy (going back to CS6) if Save As is limited to only the previous version (that's a lot of saving, reopening, and resaving -- not to mention having to keep all previous revs installed on your drive). I think a feature request for a more robust "save as" system is in order (something akin to Illustrator, where multiple versions are listed as options).
I also agree with Bill's idea that there should be some mechanism made available to "freeze" a working version of the apps (or selected apps) when you decide to stop subscribing. After thinking about it, the inevitable inability to open or revise my project files feels a bit draconian (and scary).
