One place where I work recently, just bought a Z220 with Core i7 and SSD-s 16Gb Ram (almost the same configuration), with Win7. I will give It a shot. I like the simplicity of the OSX. And on my iMac, I haven't installed again my system since 3 years. My problem is that this config, with a GTX 680 or 770 (and a 27" Dell display) would be almost the same price like the new iMac with the GTX680M. I don't know why can't the Apple support some Classified workstations for OSX (like Z family, Precision). It would be much easier decision. Yes, xeon chips are great but you only get about 10-20% increase in speed for a 50%+ markup in price, so it's not really worth it. Like you said I much prefer the i7 series for cost vs. performance.
