Jim, I like one 30" over two 27" because the mouse excursion from extreme left to right is shorter and therefore easier/faster. And I'm able to put my broadcast display closer to my workspace, which results in less neck strain.
I have a second workstation with only a 27" display, and it feels too cramped for all my palettes and tabs in Ae and Pr by comparison.
