I agree with Todd on Win 7. Win 8 does offer a bit faster boot times but the UI is a bit awkward for multiple monitor power desktop users. As for OS/X, Todd is right for Apple hardware. Hackintosh is bit murkier, it very much depends on your hardware. Do as much research on the GPU/mobo combo and OS build especially related to CUDA and drivers. Whatever is the most stable Hackintosh is likely the OS version to start with. Once you are stable at that OS revision, you can make disk image of that build and experiment with the updating to see if you can get to 10.8.4 – or alternately find someone with a very stable 10.8.4 machine running Adobe suite and build that box.
