Animate in your 8640x1920 comp and render that out a proxy movie at Quarter Resolution (2160x480) for design reviews. I usually use Photo-JPEG at 75%. If they'd really like H264 for viewing, nest the 8640x1920 comp into a 1920x1080 comp, scale the nested comp to fit the containing comp width (it'll letterbox _a lot_) and then render that for design review.
When you're ready to deliver the eight full HD panels, nest the 8640x1920 comp into eight 1920x1080 comps, rotate and adjust the Anchor Point or the Position such that each of the containing comps shows only one of the eight panels each. Render the eight 1920x1080 containing comps for delivery to the projectionist.
The delivery settings will depend on the projection system (I've done Blu-ray, HD-DVD, H264 for HD systems and widescreen DVD for SD systems).
