Custom sprites. Plural.  Make a comp with about 5-10 different sprites. One per frame (the comp would be 10 frames long) then set up particular to randomly choose a still for the sprite. Also layer up your particular layers. Don't try to get the effect all in one. Do one with just larger chunks at a small rate. Then do another on top with mid sized chunks that fall slower and have less gravity. Then a final sawdust particular layer with light gravity and use the turbulence settings at a very low scale to throw them In a realistic floaty fashion.

Use the spin and rotate attributes on the larger chunks.

Track the camera with '3D Camera Tracker' then use Particular. If you need to have it bounce off a surface with a little slide track in a solid as your bounce surface.

I'm looking for ideas here.  I have a shot where a guy is using a chain saw on a piece of wood, mostly out of frame but I need to create the wood chip particles that would be flying around.  I would envision the wood chips sort of flying first up, then being taken back down through normal gravity.
