Generally -- at least up here (in Canada) -- you need to be both registered as a business and register for a tax number/ID to be able to collect sales tax on products/services; otherwise, you'd be collecting taxes and not actually remitting them anywhere, which would be a form of fraud, I imagine.

Furthermore are there any "legal" templates for these kinds of invoices? Taxes are coming up and I want to make sure everything is above board as I had a lot of work last year. Going forward I want to keep it all nice and organized. I know I should probably hire an accountant...
