Yes Glen, it's that simple. Mac OS has a zip function. Right-click on the prefs file and select "Compress." Leave it there in the folder, and when you want to restore the prefs, just delete the existing file, double-click the zip file and start Ae. The path for Mac Ae CC prefs is root>Users>(User)>Library>Preferences>Adobe>AfterEffects>12.2. There's also a suite of apps for Mac and CC by Digital Rebellion that has a Preference Manager app that makes it pretty easy, which would answer your question about a script based solution.
