The LogTransport processes are the processes by which information is sent back to Adobe when you opt in to the Product Improvement Program.
The Premiere Pro installer thinks (incorrectly) that it can't update Premiere Pro unless that process is quit.
I'm not sure why the process wouldn't be appearing in the Activity Monitor. However, if that is the case, the best way to make sure that that process is stopped would be to restart the computer (and not start any Adobe applications before performing the update).
