I'm not on an apple device anymore, but the android play store has an app called "motion tracking markers" that gives you tracking points all around the screen and allows you to shift the background color if you need a specific spill color on exterior objects. I'm pretty sure there are apps similar to this for apple devices. As for the content on the screen, I normally just make a precomp the size of the phone's screen and then composite that on top of what was already there. Not key and place underneath.
