Madmapper ( http://www.madmapper.com ) and Millumin ( http://www.millumin.com ) are two very popular and incredibly flexible mapping softwares (mac only).
They are the defacto standard for anything mapping really. They play really well with other software ( syphon ) making it really easy to integrate interactivity from i.e. 3d engines  into video mapping - or rather - taking the interactivity out of the square screen and integrate it into the 'real' world.
Both are in my toolbox for when doing projection mapping work.

I dont find touch design that much of a gold standard for mapping projects. It is more of option of out many tools making interactivity.
Here in eu the corporate av world uses heavily Watchout ( http://www.dataton.com/watchout - pc only). Part of the reason (besides being very stable) is that it works really well making giant screens using an infinite amount of projectors. But the D3 ( http://www.d3technologies.com ) software is the most comprehensive (and expensive) mapping video server solution on the market.

That said, madmapper and milumin can solve your needs just as well for the most part just as well :-)
