As Robert mentioned there's a number of tutorials explaining how to do a variety of these types of effects. They usually involve drawing a path and then keyframing the percentage of the path stroked, the start/end/offset. If you don't want to keyframe and you want some sort of 'live' recording of a stroke you might be able to use the motion sketch feature with the 'write on' effect.
