The lady in the tutorial says to click the layer, which she does in the tutorial. I couldn’t make out the square for the gear, probably because of my interface brightness setting? But, now that I know it’s there, it makes all the difference.

It's not the actual gear you click. For some reason they used that same gear icon as a "check mark" that basically shows you've selected the layer.
So in the column that has the gear icon, below that icon, is a column of blank check boxes. Tick the one for the layer you want. You don't have to highlight the layer name itself. Just the check box needs to be filled with a little gear.
Honestly, it feels like this could be alleviated with a lighter colored check box and just using an actual check mark to select things. I can’t select the gear (I see it in the top left of the dialog box.), but I can select “Layer 1” that I see in the layer dialog. Still, no keyframes are being generated, just a Corner Pin effect applied.

Before "applying the data" as a Corner Pin effect, you need to select "create tracking data" and select the little gear on the Mocha layer dialogue that comes up. When this happens correctly, you will see the key-frames for each corner of your Mocha surface. This can be copied and pasted, expression linked OR use the Apply method to create the Corner Pin.
The play issue sounds odd. You may need to open a support case and provide more info: I appreciate these tutorials!
But… Mocha isn’t working for me as your first tutorial describes. I’m trying to do a simple label replacement on a bottle. I tracked the surface in Mocha with four control points, and the track worked as expected.
But, when I close the interface and return to Ae, clicking the buttons in the sequence described doesn’t generate any keyframes, although it does add a Corner Pin effect to the layer I selected for “Export Layer To,” whether its the layer I tracked, or a Null layer I added.
What am I doing wrong? Something simple, perhaps?
BTW, when I hit play in the Mocha player controls, I can’t get it to stop with spacebar or Esc.
